Instructions:
- Preheat the grill to high.
- In a large bowl, mix together the minced lamb, oregano, cumin, coriander, smoked paprika, and some salt and pepper.
- Add the onion and garlic to the bowl and mix well.
- Shape the mixture into 4 long sausage shapes and place on a baking tray.
- Grill for 10-12 minutes, turning occasionally, until cooked through.
- While the kebabs are cooking, mix together the tomato puree and lemon juice in a small bowl.
- Toast the pittas under the grill for 1-2 minutes.
- To assemble the kebabs, place a handful of shredded lettuce on each pitta, followed by some chopped tomato and red onion.
- Top with a cooked kebab and drizzle over the tomato puree and lemon juice mixture.
- Serve immediately.
