Sweet Potato Mash

4 sweet potatoes, peeled and cubed
¼ cup almond milk
¼ cup extra-virgin olive oil
½ teaspoon sea salt
â…› teaspoon freshly ground black pepper


In a large pot over high heat, combine the sweet potatoes with enough water
to cover by 2 inches. Bring the water to a boil.

Reduce the heat to medium
and cover the pot.

Cook for 15 to 20 minutes until the potatoes are soft.

Drain the potatoes and return them to the dry pot off the heat.

Add the
almond milk, olive oil, sea salt, and pepper.
