- Preheat your Ninja Air Fryer to 360°F (180°C) for a few minutes.
- In a large mixing bowl, whisk the eggs until well beaten. Add the cottage cheese and whisk until combined.
- Spray the air fryer basket with cooking spray to prevent sticking.
- Add the mushrooms, bell peppers, spinach, cherry tomatoes, and onion to the egg mixture. Stir well to evenly distribute the ingredients.
- Pour the mixture into the air fryer basket. Make sure it’s spread evenly.
- Sprinkle the grated cheddar cheese on top.
- Place the basket in the preheated air fryer and cook for about 15-20 minutes or until the quiche is set in the center and the cheese is golden brown on top. Cooking time may vary, so keep an eye on it.
- Once cooked, carefully remove the quiche from the air fryer using oven mitts or tongs.
- Allow the quiche to cool for a few minutes before slicing it into wedges. Season with salt and pepper to taste.
- Serve the slimming world crustless quiche warm or cold, depending on your preference.
