🍛 Slimming Cajun Chicken & Rice One-Pot

👩‍🍳 Instructions:

  1. Sauté the base:
    Spray a large non-stick saucepan or deep frying pan with low-calorie cooking spray.
    Sauté the onion and garlic for 2–3 minutes until softened.

  2. Add chicken and spices:
    Add the diced chicken breast. Cook for 4–5 minutes until lightly browned.
    Stir in the paprika, cumin, oregano, Cajun seasoning, salt and pepper. Coat everything well.

  3. Stir in veggies:
    Add the red and yellow peppers. Cook for another 2–3 minutes until starting to soften.

  4. Add rice and liquids:
    Stir in the uncooked rice, chopped tomatoes, and chicken stock. Bring to a boil.

  5. Simmer:
    Reduce heat to low, cover with a lid, and let simmer gently for about 20–25 minutes.
    Stir occasionally to prevent sticking. Add a splash more water if needed.

  6. Finish and serve:
    Once the rice is tender and the liquid absorbed, fluff up the rice and check seasoning.
    Garnish with fresh chopped parsley or spring onions.
