Instructions:
1️⃣ Preheat oven to 180°C (350°F) and line a small baking dish with parchment paper.
2️⃣ In a bowl, mix blended oats, baking powder, and salt.
3️⃣ In another bowl, whisk eggs, sweetener, Greek yogurt, lemon juice, zest, and vanilla extract.
4️⃣ Gradually add dry ingredients to wet ingredients and mix until smooth.
5️⃣ Pour mixture into the lined baking dish and spread evenly.
6️⃣ Bake for 15-20 minutes or until golden and set in the middle.
7️⃣ Let cool, then cut into bars.Optional Toppings:
