SLIMMIN PANCAKES

Instructions

    1. Add your oats to a blender and blitz until you have a fine powder.
    2. In a mixing bowl, combine the oat flour, two of the eggs, the yogurt, vanilla essence, baking powder and sweetener and whisk until smooth.
    3. Whisk in the last two eggs until the mixture is super smooth. Leave to sit for 10-15 minutes to thicken.
    4. Place a frying pan over low heat and spray it with low calorie cooking spray. When the cooking spray starts to bubble, add then spoon in your pancake batter.
    5. Each pancake needs about two and half tablespoons of batter.
    6. When the pancake starts to bubble on the top side, flip it using a spatula and cook until the bottom begins to brown. Place to one side and repeat with the remaining batter until it is all used up.
    7. Serve with fresh fruit and your choice of toppings!
