🍛 Slimming Cajun Chicken & Rice One-Pot

📝 Ingredients:

  • 4 skinless chicken breasts, diced

  • 1 onion, finely chopped

  • 2 garlic cloves, minced

  • 1 red pepper, diced

  • 1 yellow pepper, diced

  • 150g long grain rice (uncooked)

  • 400ml chicken stock (low-salt)

  • 1 tin (400g) chopped tomatoes

  • 1 tsp smoked paprika

  • 1 tsp ground cumin

  • 1 tsp dried oregano

  • 1–2 tsp Cajun seasoning (adjust to taste)

  • Low-calorie cooking spray

  • Fresh parsley or spring onions (for garnish)
