French Toast

1½ cups unsweetened almond milk
2 eggs, beaten
2 egg whites, beaten
1 teaspoon vanilla extract
Zest of 1 orange
Juice of 1 orange
1 teaspoon ground nutmeg
6 light whole-wheat bread slices
Nonstick cooking spray


In a small bowl, whisk the almond milk, eggs, egg whites, vanilla, orange
zest and juice, and nutmeg.

Arrange the bread in a single layer in a 9-by-13-inch baking dish. Pour the
milk and egg mixture over the top.

Allow the bread to soak for about 10
minutes, turning once.

Spray a nonstick skillet with cooking spray and heat over medium-high heat.

Working in batches, add the bread and cook for about 5 minutes per side until
the custard sets.
